Your Grocery List:
1 bag of instant brown rice

Fry the shrimp on medium heat with oil. Set Aside.

Make the bag of instant brown rice according to directions on the box.

What I made today...

Here is another installment of my "famous" recipes. I have decided to try and cook something new every week at a minimum, and then post pics and the recipe. This is my first one, and it's a special sea food dish for those of you that can't eat meat on Fridays ;)/or if you just like sea food...By the way I finally got my Rachel Ray pots and pans! I love cooking!! :)

Tomatoes and Shrimp Pasta

Your Grocery List:

1 large onion
2 cloves of garlic
1/2 cup shopped (fresh) Basil
1 can stewed tomatoes
Olive Oil
Pepper/Salt
1 box linguine pasta
1 bag frozen shrimp
1 pinch of sugar

Heat a pan with a teaspoon of olive oil and cook chopped up garlic and onion until tender. Add can of tomatoes and season with pepper and salt to taste. Let simmer for 10 min. Add fresh basil and mix all together with a pinch of sugar. Set Aside.

Boil your pasta as usual,(to avoid sticking add a bit of salt) and season to taste when done. (To make this a healthier meal chose a whole grain pasta)

In a pan cook shrimp with a tea spoon of olive oil and season to taste with pepper and salt. Cook until shrimp is tender.

Mix all together well, and serve...

What I made today...

I have not posted one of these blogs in a while so here you go......Today is a special snack recipe! I learned how to make these from Tom's mom.
They are called...

Jalapeno Poppers.
Your Grocery List:

  • Jalapenos

  • Cream Cheese

  • Bacon

  • Chicken Strips ( already made and breaded)

You take the jalapenos and half them, clean out all the seeds and insides...(Make sure you wear gloves to keep your skin from burning)....

Scoop some cream cheese into each half, and add a piece of cooked chicken to each then wrap them with a strip of bacon. Place them in a baking sheet and (oven @ 350 degrees) bake them until bacon is crispy.

Easy does it! They are great appetizers and are very yummy!! Enjoy!!

Chicken Strips Frying in pan...

Breaded Strips.....

Plate with breading crumbs and marinated chicken..

Marinated, defrosted, and cut up into strips........

This blog is a bit late this is wha tI made for dinner about two nights ago. Chicken strips..Yessika style..

You Grocery List:
  • Bag of chicken breasts
  • Oil
  • Seasoning of your choice ( I use Goya seasoning powder)
  • Breading Crumbs ( I use italian style crumbs)
  • 3 eggs
  • Pepper

Defrost chicken breast and cut into strips....marinated them with seasoning, beat 3 eggs and add pepper...heat a pan with enough oil to halfway cover a piece of chicken and let the oil heat up. Place breading crumbs on a plate, dip piece of chicken in the egg batter then roll over crumbs until fully covered ( repeat step with each strip). Make sure oil is hot when placing the strip ( it should sizzle). Add strips to oil and fry until golden brown......Simple enough right? Again this is fairly cheap you can add your favorite sides such as corn, rice, or potatoes.

What I made today...

Final Product!! Lol

Sauce/w meat combined...

Basic Ingredients

Ground Beef...

Today was a pretty great day. I actually drove on the highway!! I know it may seem like a simple task, but here is the deal... 1.) I did not do the highway even when I was in El Paso and 2.) have you seen the highways and traffic in San Antonio? and finally 3.) I never know were the fuck I am at...So I definitely tackled a major thing today. I am driving around more and I am starting to recognize streets and areas. Another gray day of course, I miss the sun... I talked to NJ and I can't help it I love him, damn it I really hate that I can't control it more. So anyway I have a special treat today. Today I made spaghetti, and not just any kind, but the kind that my mother makes. Honestly I have never had better, but of coursed I am biased lol. So here goes..

You Shopping List:
  • Pasta
  • Ground Beef
  • Bottle of sauce (your choice)
  • Can of roasted tomatoes
  • Spaghetti seasoning packet (found in the spice and taco seasoning aisle)
  • Oregano
  • Celery
  • Onions
  • Bay leaves
  • Garlic clove or powder
  • Pepper
  • Butter
  • Garlic Bread ( if you want)
  • Parmesan Cheese ( if you want)
To make the pasta you simply boil in a pot until the past is soft, I personally boil it with a drop of oil in the water to keep it from sticking and garlic powder as well as pepper.

Cook the ground beef seasoning it with garlic powder and pepper to taste....

To make the sauce combine the sauce with the roasted tomatoes and add the garlic powder, pepper, 2 bay leaves, a pinch of oregano, and spaghetti sauce powder mix, combine all and heat on low
Finely chop onions and celery and add to sauce.

After the sauce is done and the beef is done combine together in large pan.

The noodles should be soft by now, drain and add a teaspoon of butter and mix gently. Season the noodles to taste, with pepper and garlic powder and/or salt.

The garlic bread I bought was the kind you baked in the oven and Ta-da!!

I know many people already know how to make spaghetti but I figures I would share the way I do it, since it may be diff rent. I personally think it is easy and sort of cheap to make.

After I bought all the ingredients I believe I spent about $25.00 at Target and it feed 4 people.

Enjoy!!
